Back in Kentucky after a week on the beach and some time in DC. Driving back to Iowa tomorrow to prepare for the 24 Hour Race, oh boy I can't wait. In the mean time I have been asked, by Sweet Jane, to post a couple recipes. I can't remember one of them (the bean salad) but here is the other. I'll get back with the other in a couple days.
1 bag shredded cabbage salad mix
Green onions sliced
1 cup sliced almonds and 1 small container sesame seeds (toast these in a
325 degree oven until light brown)
2 pkg. Ramen noodles (chicken flavor) (uncooked) (crunched up)
1 cup or more cooked chicken breast (I usually cook 2 whole breasts) (cut
up)
I also add celery and all kinds of colored peppers, and raisins or craisins.
Put all of this in a large bowl and mix well.
Dressing
4tblsps.white vinegar
4tblsps. Sugar
Salt, pepper to taste
1 cup oil mixed with the seasoning packages from the noodles.
Put this in a large cup or bowl. I have good luck with this if I microwave
it just to warm it up. It mixes up well and adds additional flavor to the
salad. Pour over salad and mix well. Should be refrigerated for about
three to four hours before serving.
