Here in resort world guest service is objective number one, that means working through most holidays in order to provide guest with exceptional experiences on their vacations. Takes a little getting use to at first but after the first year it doesn't seem like a big deal, aside of course from not being around family. Thanksgiving for 2008 happened on December 1st.
I woke up this morning feeling like it was Thanksgiving since it is my first day off in six. Preparation started last night with dunking the bird in a 5 gallon bucket filled with my special brine. After a nice sleep and easy morning, more prep began at 10 after returning for last minute items. The bird was in by noon and was being carved before 4. Most people scoff at the idea of such a short time for such a bird but it was not only done, it was juicy. In fact, juice was squirting out from under the skin as I carved.
Turkey, stuffing, mashed potatoes, cranberry relish, green bean casserole, apple pie, and many drinks were consumed at apartment 201 today. All went home happy and quite full.
Can't wait for those sandwiches...

Glad you kept up the tradition of naming the bird. I must say Tom is not real creative. He looks good next to the pink tea kettle. Glad you are eating well and don't forget the dijon mustard and the cranberry sauce on that sandwich. Nothing wrong with traditions son! Happy belated Thanksgiving. We did miss you. Love from home.
